Denomination: Sicilia DOC
Production area: Western Sicily, Contrada Menna in the territory of Salaparuta
Vineyard: planting density of 3,500 vines per hectare; trained with vertical trellising; Guyot pruning with a yield of about 7,000 kg per hectare
Soil: vineyard altitude 250 m a.s.l.; clay-loam soils with sub-alkaline reaction, rich in nutrients
Climate: mild winters; dry, breezy summers with strong temperature variations between day and night
Vinification: fermentation takes place in stainless-steel tanks with skin maceration for about 10 days at a temperature of 25–28 °C; after malolactic fermentation, the wine is aged for 8 months in tanks and then in the bottle for at least another 5 months
Analytical data: alcohol 13.40 % vol, total acidity 5.80 g/l, pH 3.62

Longevity: best enjoyed within 4 years
Food pairings: ideal as an aperitif and paired with typically Mediterranean first courses, as well as light meat and vegetable dishes. Serve at a temperature of 15–17 °C.

MY TASTING NOTES

Colore rosso rubino con riflessi violacei, all’olfatto si presenta fruttato con sentori di frutta rossa (ciliegia). In bocca mostra una buona struttura, con tannini piacevolmente avvolgenti ed una gradevole freschezza
