Denomination: Indicazione Geografica Tipica (Typical Geographical Indication)
Production area: Western Sicily, Contrada Pergola in Salaparuta, province of Trapani;
Vineyard: from a single plot of 8,500 vines, planted in 2007, facing north; trained with vertical trellising, pruned using Guyot method, with a yield of about 7,000 kg per hectare;
Soil: vineyard altitude 550 m a.s.l.; medium-textured calcareous soil;
Climate: mild winters; dry, breezy summers with strong temperature variations between day and night;
Vinification: fermentation takes place in stainless-steel tanks at controlled temperature; during fermentation, several additions of raisins are made throughout the process. The wine is aged in tanks for 12 months and then in the bottle for 8 months before release;
Analytical data: alcohol: 14.00 % vol – total acidity: 5.90 g/l – pH: 3.52;

Longevity: over 15 years;
Food pairings: a meditation wine, ideal with dry pastries, ricotta- and chocolate-based desserts. Intriguing with blue and semi-aged cheeses. Serve at a temperature of 10–12 °C.

MY TASTING NOTES

golden color with amber reflections; on the nose it offers sweet notes of honey, apricot, figs, and candied oranges, accompanied by hints of aromatic herbs; on the palate it is fragrant and persistent with good freshness;
